A Distance Learning Workshop will be held on THURSDAY, FEBRUARY 7, 2008. The three-hour Workshop, “Meeting Children’s Special Food and Nutrition Needs in Child Nutrition Programs,” will be offered from 1:00 p.m. until 4:00 p.m. The training will include a review and introduction to the National Food Service Management Institute’s (NFSMI) 2006 Breakfast Lunch Training Module. Alicia Casteel and Sheila Brown will provide an overview of the materials developed by NFSMI. Child Nutrition Directors are encouraged to use the materials in training kitchen managers and food service assistants to meet the special food and nutrition needs of children with special dietary needs. Goals are to train food service assistants to understand and to apply the laws and regulations that require accommodations for children with special food and nutrition needs, and to become familiar with special needs frequently seen in schools, including diabetes, food allergies, and inborn errors of metabolism and the associated accommodations for students.
